Vegetable Spaghetti Salad

Ingredients

  • 6 ounces spaghetti pasta cooked, drained and rinsed
  • 2 1/2 cups Armenian cucumber peeled and sliced
  • 1 cup carrots sliced
  • 12 cherry tomatoes quartered
  • 1 tbsp Salad Supreme seasoning
  • 1/2 cup Italian salad dressing
  • 1/4 cup Parmesan cheese freshly grated-plus more to garnish, if desired

Instructions

  1. Cook pasta for 11 minutes. Drain and rinse in cold water. Set aside.

  2. Peel, scrape out the seeds if they are big and slice cucumber into bite-sized pieces.

  3. Peel and slice carrots into bite-sized pieces or if using baby carrots, just slice.

  4. Cut cherry tomatoes into quarters.

  5. In a bowl, combine sliced cucumbers, carrots, quartered tomatoes, pasta, Salad Supreme seasoning, Italain dressing and parmesan cheese.

  6. Stir to combine.

  7. Refrigerate to chill.

  8. Serve with more parmesan cheese, if desired.
