A simple Asian inspired sweet and sour recipe with a homemade sauce.
Cut chicken into bite-sized pieces.
Place corn starch, salt and pepper into a bowl or on a shallow plate. Mix.
Crack eggs into another bowl and whisk.
Coat some of the chicken pieces in the corn starch mixture and then, dip each piece in the egg.
Heat oil in a frying pan. when oil is hot, fry the coated chicken pieces-brown on each side. Do not cook all the way through-just brown the sides in hot oil.
Place the browned chicken pieces on a greased baking sheet (with sides).
Then, repeat by dipping the remaining chicken pieces into the corn starch mixture and egg. Brown and place on the baking sheet.
When all of the chicken has been browned and is on the baking sheet, pour the sweet and sour sauce over the top of the chicken.
Bake in a 325° pre-heated oven for one hour. Turn the chicken pieces every 15 minutes for best results.
Serve with rice and enjoy!
