An easy, yummy and fun soup that is perfect for Fall.
Add butter and finely diced onion to a deep pot and cook for about 3 minutes.
Add minced garlic and finely diced apples. Cook for 1 minute.
Add chicken broth, water, pumpkin puree, salt and pepper. Cover and bring to a boil and simmer for 15-18 minutes, until apples are very tender. Make sure to stir frequently enough so the soup will not burn.
Remove from the heat and blend with an immersion blender.
Add heavy cream, ground cloves, ground cinnamon and ground nutmeg.
Stir to heat through and serve with pipitas or croutons, as desired.
