Ingredients

  • 4 eggs beaten
  • 1 1/2 cups sugar
  • 1 cup oil
  • 2 cups pumpkin (not pumpkin pie mix) canned-I prefer Libby's brand
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground cloves optional
  • 1 1/2 cups chocolate chips
  • 3/4 cup pecans chopped, optional

Instructions

  1. Pre-heat the oven to 350°. This muffin recipe is quick to make.

  2. Combine beaten eggs, sugar. oil and the pumpkin in a large mixing bowl, with an electric mixer or a wooden spoon. Mix well.

  3. Add flour, baking powder, baking soda, salt, cinnamon and cloves to the pumpkin mixture. Mix just to combine-do not over mix.

  4. Fold in chocolate chips. (can add chopped pecans-3/4 cups)

  5. Fill greased muffin pan cups two-thirds full with the batter (or use cupcake liners).

  6. Bake for 18-20 minutes in a 350° pre-heated oven.

  7. Serve and enjoy these moist and delicious muffins.

  8. NOTE: I like to lightly press a few chocolate chips into the top of the batter, before baking.
