A moist and delicious fall muffin recipe your family will love!
Pre-heat the oven to 350°. This muffin recipe is quick to make.
Combine beaten eggs, sugar. oil and the pumpkin in a large mixing bowl, with an electric mixer or a wooden spoon. Mix well.
Add flour, baking powder, baking soda, salt, cinnamon and cloves to the pumpkin mixture. Mix just to combine-do not over mix.
Fold in chocolate chips. (can add chopped pecans-3/4 cups)
Fill greased muffin pan cups two-thirds full with the batter (or use cupcake liners).
Bake for 18-20 minutes in a 350° pre-heated oven.
Serve and enjoy these moist and delicious muffins.
NOTE: I like to lightly press a few chocolate chips into the top of the batter, before baking.
