An easy one pan dinner with sun dried tomatoes, pesto, chicken and tortellini.
Spray a 9 x 13 baking dish with non-stick cooking spray.
Place chopped sun-dried tomatoes, minced garlic shredded parmesan, black pepper, milk, pesto, chopped chicken and spinach into the baking dish. Mix to combine.
Add the cheese tortellini and mix carefully, do not break the tortellini.
Cover with aluminum foil and bake in a 350° oven for 30 minutes.
Remove from the oven and remove the foil.
Top with grated mozzarella cheese and place the baking dish back into the oven to melt the cheese (3-5 minutes).
Remove from the oven and enjoy this simple and flavorful one pan casserole.
