One Pan Tuscan Tortellini Casserole

An easy one pan dinner with sun dried tomatoes, pesto, chicken and tortellini.

Ingredients

  • 3/4 cup sun dried tomatoes (in olive oil and Italian herbs) chopped and extra oil removed by pressing with a paper towel
  • 2 cloves garlic minced
  • 1/2 cup parmesan cheese shredded
  • 1/2 tsp pepper
  • 1/2 cup milk
  • 1/4 cup basil pesto pre-made
  • 1 1/2 cups rotisserie chicken shredded or chopped
  • 3 cups spinach fresh
  • 3 cups cheese tortellini frozen
  • 1 cup mozzarella shredded

Instructions

  1. Spray a 9 x 13 baking dish with non-stick cooking spray.

  2. Place chopped sun-dried tomatoes, minced garlic shredded parmesan, black pepper, milk, pesto, chopped chicken and spinach into the baking dish. Mix to combine.

  3. Add the cheese tortellini and mix carefully, do not break the tortellini.

  4. Cover with aluminum foil and bake in a 350° oven for 30 minutes.

  5. Remove from the oven and remove the foil.

  6. Top with grated mozzarella cheese and place the baking dish back into the oven to melt the cheese (3-5 minutes).

  7. Remove from the oven and enjoy this simple and flavorful one pan casserole.
