Microwave Pumpkin Cheesecake

Ingredients

Crust:

  • 1 tbsp butter
  • 1 tsp white sugar
  • 1 whole graham crackers crushed well in a ZipLoc bag

Cheesecake Filling:

  • 1/2 cup whipped cream cheese
  • 1 large egg
  • 2 tbsp pumpkin puree-canned pumpkin not pumpkin pie mix
  • 3 tbsp white sugar
  • 3/4 tsp pumpkin pie spice
  • 1/4 tsp cinnamon

Instructions

  1. In a large microwave safe mug or bowl, melt the butter, in the microwave.

  2. Mix the crushed graham crackers and white sugar into the butter to make the crust. Press the mixture into the bottom of the bowl or mug and up the sides a little bit. Set aside.

  3. In a separate bowl, deep enough to use an immersion blender in, add whipped cream cheese, egg, pumpkin puree, brown or white sugar, pumpkin pie spice and cinnamon.

  4. Mix this mixture with an immersion blender until well blended-smooth and creamy.

  5. Pour the pumpkin mix over the prepared graham cracker crust.

  6. Microwave for 90 seconds.

  7. Remove from the microwave oven and refrigerate for one-two hours or longer, to chill. If you get impatient, try the freezer for a shorter period of time.

  8. Serve with whipping cream and a sprinkle of cinnamon, if desired.
