Mexican Street Corn Dip

Ingredients

  • 4 cups corn cut off the cob
  • 1 1/2 tbsp butter
  • 1/2 cup red bell pepper diced
  • 1/4 cup green onion sliced
  • 1/3 cup cilantro roughly chopped
  • 1 large jalapeno diced small
  • 1/2 cup avocado diced
  • 2 medium limes zest and juice
  • 3/4 cup cotija cheese
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 3/4 tsp smoked paprika
  • 3 tbsp sour cream
  • 3 tbsp mayonnaise

Instructions

  1. Place butter into a frying pan and heat-do not brown.

  2. Add corn and brown, on high, to get a char on some of the pieces of corn. Adjust heat as needed so the corn does not burn.

  3. Mix lime juice and lime zest with salt, pepper, cumin, smoked paprika, sour cream and mayonnaise. Mix well.

  4. Place browned/charred corn in a serving bowl.

  5. Add diced red bell pepper, sliced green onion, chopped cilantro, diced jalapeƱo, and diced avocado to the corn. Mix.

  6. Add the lime juice mixture and stir to combine.

  7. Add the cotija cheese and stir.

  8. Top with sliced avocado, sliced jalapeƱos and extra cotija cheese, as desired.

  9. Serve with tortilla chips or as a side dish. Enjoy!
