Instant Pot Egg Bites

A super simple protein breakfast recipe, made in the Instant Pot.

Ingredients

  • 1 cup water poured into the bottom of the instant pot
  • 4 large eggs
  • 2 tbsp milk
  • diced ham or bacon crumbles
  • grated cheese
  • tomatoes diced
  • onion diced
  • chopped cilantro optional
  • salt, pepper, onion and/or garlic powder to taste and as desired

Instructions

  1. Pour 1 cup of water into the bottom of the instant pot. Use trivet in the bottom, as well, so the silicone pan is not on the bottom of the instant pot.

  2. Spray silicone egg pan with non-stick cooking spray.

  3. In the bottom of each egg bites cup, place desired ingredients (bacon or ham, cheese, onion, tomatoes or cilantro, to half full.

  4. In a mixing bowl, whisk the eggs, milk and seasonings.

  5. Divide egg mixture between the seven egg bite cups, filling 2/3 full to a little more than 2/3 full. Mix each egg cup up a little.

  6. Place the lid on the egg bite pan and place into the Instant Pot with the water and the trivet. Place the lid on the Instant Pot and seal.

  7. Set the Instant Pot to high pressure for 10 minutes. Press start.

  8. When egg bites are done, release the pressure carefully from the Instant Pot as directed in your instructions.

  9. Remove the lid when all of the pressure has been released.

  10. Remove the egg bite pan from the oven carefully, it will be hot.

  11. Enjoy with some fruit of salsa.

  12. Optional-Replace one egg with a tablespoon or two of cottage cheese and blend.

  13. Other ingredients you could use: cooked and crumbled sausage, chopped up little smokies sausages, green chilies, diced jalapeƱos, different cheeses, torn baby spinach leaves, no meat at all, what sounds good to you? Give it a try.

  14. Note-I have filled my egg cups with about 3 centimeters of room left to the top-I have never had these spill over. They get tall and push up the silicone lid a bit, but that's not a problem.
