A delicious fall (or anytime) dessert recipe, full of sweet peaches and topped with a crispy and sweet oatmeal topping.
Peel and slice peaches and place them in a greased 2-2.5 quart baking dish.
Sprinkle corn starch, vanilla and salt over the peaches and stir to coat. Set aside.
Melt butter and add the flour, brown sugar, white sugar, cinnamon, salt, oats and the chopped pecans, if using. Stir to combine.
Place this mixture evenly over the peaches in the baking dish. Press the oat mixture down slightly.
Bake in a pre-heated 350° oven for 43-45 minutes-until the topping is your desired amount of browned and it is bubbly around the edges.
Serve with vanilla ice cream and enjoy!
