A super easy and super moist banana muffin recipe with a crumble topping.
Combine mashed bananas, sugar, egg, oil, vanilla, cinnamon and nutmeg until well blend, in a mixing bowl with an electric mixer.
Add flour, baking soda, baking powder and salt. Mix until just blended.
Spray a muffin pan with non-stick cooking spray and fill muffin cups, leaving enough room for the crumb topping. I just divide the batter between the 12 muffin cups. However, if you used larger bananas than I used, leave space for the topping, when filling the muffin cups.
Divide crumb topping between the twelve muffin cups-sprinkle on top of the batter.
Bake in a 375° pre-heated oven for 15 minutes.
Remove from the oven and cool on a cooling rack.
Place brown sugar, flour, butter, salt and vanilla into a small bowl.
Mash mixture together until well blended. I use a fork until blended and then, mash it together and sprinkle it with clean hands. Place on top of muffin batter before baking.
