A simple casserole recipe for busy weeknights.
Place tater tots in a lightly greased 9x13 baking dish and set aside.
Place chicken pieces into a deep frying pan with the olive oil, then add sliced green onions and minced garlic. Cook until the chicken has cooked through and is lightly browned.
When chicken has cooked through, add the salt, pepper, cumin, red pepper flakes, green chilies, cream of chicken soup, sour cream and chicken broth. Heat through.
Add 2 cups of grated cheese and stir to melt.
Spoon the chicken mixture over the tater tots and top with 1/2 cup of cheese (extra cheese is optional).
Bake in a 350° oven for 40 minutes-uncovered, until hot and bubbly.
Remove from the oven, top with cilantro leaves and serve.
