The perfect comfort food recipe-filled with veggies, chicken and potato gnocchi.
Place butter, celery, carrots and onion into a large pot and cook on medium high heat to melt the butter and cook the vegetables-about 15 minutes.
Turn heat down to medium and add flour and garlic. Stir and cook 1 more minute.
Add diced chicken, chicken broth, salt, pepper, thyme, poultry seasoning and heavy whipping cream. Simmer to finish cooking vegetables and to thicken the soup.
When vegetables are desired tenderness and the soup has thickened, add the potato gnocchi and cook for 2 minutes.
Add the chopped baby spinach, stir and allow enough time for the spinach to wilt.
Serve and enjoy with some fresh bread, if desired.
