A quick and easy cheesy potato side dish.
Pre-heat oven to 350°
Place frozen hash browns into a 9x13 baking dish and set aside.
In a large sauce pan, add butter, grated onion, condensed soup and sour cream. Stir over medium heat until the butter has melted.
Add 1 1/2 cups of grated cheese and stir to melt.
Pour this mixture over the frozen hash browns and stir with a fork to combine.
Cover with foil and bake for 45-50 minutes, until hot and bubbly.
Remove from the oven and remove the foil.
Optional, but good: Sprinkle 1/2 cup grated cheese or more over the top. Place back in the oven under the broiler to toast up the grated cheese-watch closely! Serve and enjoy!
Another option instead of the browned cheese on top: Mix 2 tablespoons of melted butter with 2 cups crushed corn flakes. Place on top of cheese potatoes and bake uncovered.
