Balsamic Grilled Chicken Marinade

Ingredients

  • 2 pounds chicken breast thawed

Marinade Ingredients:

  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp dijon mustard
  • 2 tbsp soy sauce
  • 3 tbsp lemon juice
  • 1/3 cup olive oil
  • 2 tbsp brown sugar
  • 1 1/2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1 tsp smoked paprika
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme

Instructions

  1. Place all of the marinade ingredients in a mixing bowl (or a large Zip-Loc bag-if preferred). Stir well to combine.

  2. Add the fresh (not frozen) or thawed chicken breasts to the marinade. Stir to coat.

  3. Cover with plastic wrap and place in the refrigerator for 3-4 hours.

  4. When chicken breasts are ready, remove them from the refrigerator to rest while the grill heats up. Heat the grill to medium-high heat.

  5. Place chicken pieces on the hot grill and grill for about 5 minutes on each side or until the internal temperature is 165° (do not over cook or under cook-use a thermometer to check temperature).

  6. Serve with salads, rice, veggies, pasta, bread or whatever you love to serve with grilled chicken.

  7. NOTE: Try to use a bowl or bag that will allow your chicken pieces to be fully immersed in the marinade while marinating.
