- 1 tsp white sugar
- 1 whole graham crackers, crushed well in a ZipLoc bag
- 1/2 cup whipped cream cheese
- 1 large egg
- 2 tbsp pumpkin puree-canned pumpkin, not pumpkin pie mix
- 3 tbsp sugar
- 3/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
How To Make Microwave Pumpkin Cheesecake:
- In a large microwave safe mug or bowl, melt the butter, in the microwave.
- Mix the crushed graham crackers and white sugar into the butter to make the crust. Press the mixture into the bottom of the bowl or mug and up the sides a little bit. Set aside.
- In a separate bowl, deep enough to use an immersion blender in, add whipped cream cheese, egg, pumpkin puree, brown or white sugar, pumpkin pie spice and cinnamon.
- Mix this mixture with an immersion blender until well blended-smooth and creamy.
- Pour the pumpkin mix over the prepared graham cracker crust.
- Microwave for 90 seconds.
- Remove from the microwave oven and refrigerate for one to two hours, to chill. If you get impatient, try the freezer for a shorter amount of time.
