Ingredients Needed For Mexican Street Corn Dip
- 4 cups corn, cut off the cob
- 1 1/2 tbsp butter
- 1/2 cup red bell pepper, diced
- 1/4 cup green onion, sliced
- 1/3 cup cilantro, roughly chopped
- 1 large jalapeno, diced small
- 1/2 cup avocado, diced
- 2 medium limes, zest and juice
- 3/4 cup cotija cheese
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 3/4 tsp smoked paprika
- 3 tbsp sour cream
- 3 tbsp mayonnaise
How To Make Mexican Street Corn Dip:
- Place butter into a frying pan and heat-do not brown.
- Add corn and brown, on high, to get a char on some of the pieces of corn. Adjust heat as needed so the corn does not burn.
- Mix lime juice and lime zest with salt, pepper, cumin, smoked paprika, sour cream and mayonnaise. Mix well.
- Place browned/charred corn in a serving bowl.
- Add diced red bell pepper, sliced green onion, chopped cilantro, diced jalapeño, and diced avocado to the corn. Mix.
- Add the lime juice mixture and stir to combine.
- Add the cotija cheese and stir.
- Top with sliced avocado, sliced jalapeños and extra cotija cheese, as desired.
- Serve with tortilla chips or as a side dish. Enjoy!
