Classic Cheese Potatoes (Funeral Potatoes)


These Classic Cheese Potatoes are a perfect side for ham. They also go well with chicken, steak, pork chops or a pork loin. They are not just for funerals.

Ingredients Needed For Classic Cheese Potatoes:

  • 24-26 ounce bag frozen hash browns
  • 1/3 cup onion, grated
  • 1/2 cup butter
  • 2 10.5 ounce cans cream of chicken soup
  • 2 cups sour cream
  • 1 1/2-2 cups cheddar cheese, grated

Instructions For Classic Cheese Potatoes:

  1. Pre-heat oven to 350°
  2. Place frozen hash browns into a 9×13 baking dish and set aside. 
  3. In a large sauce pan, add butter, grated onion, condensed soup and sour cream. Stir over medium heat until the butter has melted. 
  4. Add 1 1/2 cups of grated cheese and stir to melt. 
  5. Pour this mixture over the frozen hash browns and stir with a fork to combine. 
  6. Cover with foil and bake for 45-50 minutes, until hot and bubbly.
  7. Remove from the oven and remove the foil. 
  8. Optional, but good: Sprinkle 1/2 cup grated cheese or more over the top. Place back in the oven under the broiler to toast up the grated cheese-watch closely! Serve and enjoy!
  9. Another option instead of the browned cheese on top: Mix 2 tablespoons of melted butter with 2 cups crushed corn flakes. Place on top of cheese potatoes and bake uncovered.
