This is a great recipe for the bananas that get too ripe-we all have those because you buy a bunch of bananas one day and by the next day or two, you need to eat them all or cook with them because they will be past the point of eating-yuck. A scene from this movie with Jennifer Coolidge saying the word “moist” as she eats a cookie will never leave my memory-every time I say the word moist, it comes out of my mouth as a mimic of her saying it! Ingredients Needed For Easy Banana Muffins:
- 2 cups flour-fluff flour, scoop and level
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 4 small to medium overripe bananas, mashed
- 3/4 cup sugar
- 1 large egg
- 1/2 cup oil
- 2 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Crumb Topping:
- 1/2 cup brown sugar
- 1/4 cup flour
- 2 tbsp butter, at room temperature
- 1/8 tsp salt
- 1/2 tsp vanilla
Instructions For Easy Banana Muffins:
- Combine mashed bananas, sugar, egg, oil, vanilla, cinnamon and nutmeg until well blend, in a mixing bowl with an electric mixer.
- Add flour, baking soda, baking powder and salt. Mix until just blended.
- Spray a muffin pan with non-stick cooking spray and fill muffin cups, leaving enough room for the crumb topping. I just divide the batter between the 12 muffin cups. However, if you used larger bananas than I used, leave space for the topping, when filling the muffin cups.
- Divide crumb topping between the twelve muffin cups-sprinkle on top of the batter.
- Bake in a 375° pre-heated oven for 15 minutes.
- Remove from the oven and cool on a cooling rack.
Crumb Topping:
- Place brown sugar, flour, butter, salt and vanilla into a small bowl.
- Mash mixture together until well blended. I use a fork until blended and then, mash it together and sprinkle it with clean hands. Place on top of muffin batter before baking.
