Ingredients Needed For Buffalo Chicken Quesadillas:
- 2 cups rotisserie chicken, shredded
- 1/2 cup buffalo sauce, your favorite or my favorite-Primal Kitchen Brand
- 4 taco size flour tortillas
- Mexican blend grated cheese
- butter, for frying
- Topping ideas: sour cream or ranch, guacamole, cilantro, green onions-optional, but good
How To Make These Simple & Easy Buffalo Chicken Quesadillas:
- Shred the rotisserie chicken and mix it with the buffalo sauce. I like to heat his up in a small sauce pan. I will shred the chicken in a sauce pan, add the sauce and heat it in that pan to save me a bowl do wash.
- Heat a little butter in a frying pan.
- Place the tortilla in the frying pan and cover half of the tortilla with 1/4 of the chicken mixture.
- Sprinkle grated cheese on top of the chicken and fold the tortilla over the top to form a half circle.
- Heat until lightly browned on the bottom and then flip to brown the other side.
- Remove from the pan and cut in half.
- Serve with toppings you like, such as: ranch, sour cream, guacamole, cilantro and/or green onions.
