- 1/4 cup butter
- 1/4 cup flour
- 1/2 cup onion, diced
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 1/2 cups potatoes, peeled and diced
- 5 14.5 ounce cans chicken broth
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 1/4 tsp poultry seasoning
- 3 cups rotisserie chicken, chopped
- 4 cups egg noodles
- 1 1/2 cups half and half
Instructions For Creamy Chicken Noodle Soup:
- Prep vegetables.
- In a deep stock pot, melt the butter.
- Add the sliced carrots, sliced celery and diced onion to the melting butter. Cook for 5 minutes, stirring often. Do not let this burn.
- Add flour and stir. Cook for 1 minute. Stir constantly.
- Add peeled and diced potatoes, broth, salt, pepper and poultry seasoning to the vegetables and bring the mixture to a boil.
- Simmer for 25 minutes, until veggies are near tender (they will still have 10 more minutes to cook).
- Next, add the chicken and egg noodles and simmer for 10 more minutes.
- Then, stir in half and half. Stir to combine and heat through.
