Ingredients Needed For Avocado Corn Salsa:
- 1 pound cherry tomatoes, Romas or garden tomatoes diced
- 1 cup corn fresh off the cob
- 2 medium avocados diced
- 1/3-1/2 cup red onion chopped
- 1/4-1/3 cup cilantro leaves chopped
- 2 limes juiced
- 2 garlic cloves minced
- 1 1/2 tsp salt
- 1/2 tsp pepper
Instructions For Avocado Corn Salsa:
- Cook the corn on the cob in the microwave, wrapped in a wet paper towel for about 3 minutes. Remove the corn from the microwave and slice the corn off of the cob, when the cobs are cool enough to handle.
- Prepare the avocado, tomatoes, onion and cilantro. Place in a serving bowl with the corn.
- Add the lime juice, garlic, salt and pepper. Mix all ingredients together in a serving bowl and refrigerate to chill.
- Mix again before serving. Serve with tortilla chips and enjoy!
