Ingredients Needed For Mashed Cauliflower:
- 1 large head cauliflower-3 pounds, cut into florets
- 3 tbsp butter divided-plus more for serving, if desired
- 2 tbsp sour cream or cream cheese or plain Greek yogurt
- 4 cloves garlic, minced
- 1/2 cup parmesan cheese, freshly grated
- 1/2 tsp salt
- 1/4 tsp pepper white pepper, if you have it-if not black pepper
- dried parsley fakes or chives, optional
Instructions For Mashed Cauliflower:
- Rinse and cut the cauliflower into florets, making sure they are similar sizes. While you cut the cauliflower into florets, get a pot of salted water on the stove and start it boiling.
- When the salted water is boiling, add the florets and cook until tender-about 10-15 minutes.
- Drain the cauliflower well and set aside.
- Now, cook the minced garlic in a small frying pan with one tablespoon of butter until fragrant.
- Next, add the cauliflower, the cooked minced garlic, two reserved tablespoons butter, sour cream, parmesan cheese, salt and pepper to a food processor or large blender. You may need to blend this a little at a time, depending on the size of your blender or food processor.
- Blend ingredients until smooth and creamy.
- Serve in a serving bowl and top with extra melted butter. Sprinkle with dried parsley or chives, if desired.
