Ingredients For Raspberry Fool:
- 4 1/2 cups fresh raspberries divided
- 1/4 cup sugar
- 3 tbsp water
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 8-16 Lady Finger cookies (or vanilla wafers), optional
How To Make Raspberry Fool:
- Place all but 16 raspberries into a bowl and sprinkle with the granulated sugar and water. Let sit for 20 minutes.
- While the raspberries sit, make the whipping cream in a mixing bowl by beating the heavy whipping cream, powdered sugar and vanilla with an electric mixer until peaks form.
- After the 20 minutes have passed stir and mash the raspberries, sugar and water until the water is incorporated.
- Fold half of this raspberry mixture into the prepared whipping cream-fold two times using a rubber spatula.
- Add remaining raspberry mixture and fold one to two more times-do not over mix.
- Divide between 8 dessert cups, top with either: crushed lady fingers or serve them on the side. (can serve in a serving bowl, if desired)
- Place two fresh raspberries on top of each dessert cup to garnish.
- Serve immediately and Enjoy!
- Note: if not serving immediately, refrigerate dessert cups with raspberry mixture. Top with Lady Finger cookies and reserved raspberries when ready to serve.
