Rotisserie Chicken
Black Beans
Great Northern White Beans
Green Chile Enchilada Sauce-Mild
Chicken Broth
Cilantro
Cumin
Chili Powder
Salt
Pepper
Green Onion
Oil
Toppings:
Avocado
Lime
Tortilla Chips
Sour Cream
Cilantro
Green Onion
Instructions For Green Chile Chicken Enchilada Soup:
Chop rotisserie chicken and set aside.
Slice green onions and cook in oil in a large pot.
Add chopped chicken, drained and rinsed black beans, drained and rinsed great northern white beans, mild green Chile enchilada sauce, chicken broth, cilantro leaves, cumin, chili powder, salt and pepper to the green onions.
Bring mixture to a boil and simmer for five minutes.
Serve with slices of avocado, slices of lime, tortilla chips, sour cream, cilantro and extra green onion. Enjoy this simple and flavorful soup!

Ingredients
- 1 pound rotisserie chicken chopped into bite size pieces
- 15.5 ounce can black beans drained and rinsed
- 15.5 ounce can Great Northern white beans drained and rinsed
- 28 ounce can green Chile enchilada sauce mild
- 14.5 ounce can chicken broth
- 1 tbsp cilantro leaves chopped
- 1 1/2 tsp cumin
- 1 1/2 tsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp green onion sliced and chopped
- 1/2 tbsp oil
Toppings
- avocado sliced
- limes quartered
- tortilla chips
- sour cream
- cilantro
- green onion sliced
Instructions

Slice onion and cook in a large pot with the oil.

Add chopped chicken, drained black beans and white beans, green Chile enchilada sauce, chicken broth, chopped cilantro leaves, cumin, chili powder, salt and pepper to the large pot. Stir and bring to a boil.

Little Smokies Breakfast Bake-Little smokies are so yummy. They are great with eggs and hash browns and they are also great in this breakfast casserole. We chop them up so they are easier to eat and you don’t end up getting a whole sausage in one bite. Smaller pieces just work out better. This recipe has a delicious flavor and is easy to make.
