Ingredients Needed For Creamy Italian Sausage Tortellini Soup:
- 1 pound ground Italian sausage, mild
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, thinly sliced
- 1 cup heavy whipping cream
- 4 cups cheese tortellini, frozen or fresh
- 2 cups baby spinach, chopped
- 14.5 ounce can petite diced tomatoes, drained well
- 3 14.5 ounce cans chicken broth
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp Italian seasoning
- 1/2 tsp dry mustard
- 1/4 cup flour
How To Make Creamy Italian Sausage Tortellini Soup:
- In a large pot or stock pot (big enough to hold 14 cups of soup plus room to stir and simmer), crumble cook ground sausage.
- When the sausage has cooked through, remove sausage from the pan with a slotted spoon and place in a bowl. Set aside.
- Leave the grease from the sausage in the bottom of the stock pot, add diced onion and sliced carrots. Cook until nearly tender-12-15 minutes.
- Next, add minced garlic and flour. Stir and cook for one more minute.
- Add chicken broth, salt, pepper, Italian seasoning, dry mustard and heavy cream. Bring to a boil and then, lower the heat to simmer the soup.
- Add tortellini and simmer for 5-7 minutes.
- When carrots are desired tenderness, add drained diced tomatoes and chopped spinach.
- Heat to wilt spinach.
