Instructions For Cranberry Wassail:
On a piece of light cotton fabric cut out about a 5 to 6 inch square. Place the ground cinnamon, ground allspice, ground cloves and ground ginger in the center of the fabric. Bring the edges up to wrap the spices up in the cloth and tie with a piece of string (I have used white thread in a pinch-just use about five layers of thread to tie the spice bag up).
Place sugar, water, cranberries and the spice bag in a sauce pan that has a lid and bring the simple syrup mixture to a boil. Stir occasionally to dissolve the sugar. Boil for 4 minutes.
After the mixture has boiled for four minutes and the sugar has dissolved, place the lid on the pan.
Then, remove from the heat and allow wassail to sit for 3-4 hours.
After the spice bag has been soaking for 3-4 hours, remove spice bag from this cranberry simple syrup mixture-squeeze any juices out of the spice bag and back into the simple syrup. Discard spice bag or I freeze my spice bag to use one more time-in a ZipLoc bag.
Finish the Wassail:
Either strain the cranberry and sugar mixture through a fine wire strainer or leave with the cranberries in the mixture-your choice. I like to strain the cranberries out and any seeds.
Next, mix cranberry mixture with apple juice, orange juice and lemon juice. Mix to combine.
Bring back to a boil and serve.
Or store in the refrigerator for up to five days. Heat on the stove or in the microwave when ready to drink. This is a great beverage for the holidays, it can me made a day or two early and be warmed in a slow cooker, if that works for your holiday party.
Serve with cranberries and a cinnamon stick, if desired.

- 8 cups apple juice
- 4 cups orange juice
- 1/4 cup lemon juice

Place spices on a 5 inch square piece of light weave cotton fabric and tie up the fabric around the spices loosely, with a string.

Place sugar, water, cranberries and the spice bag in a large pot with a lid.

Bring sugar mixture to a boil and boil for 4 minutes.

Remove the pan from the heat and let set for 3-4 hours with the lid on the pan.

After the 3-4 hours, Remove the spice bag-squeeze out any sugar water from the spice bag and discard the bag or freeze it in a Ziploc for one more use. Strain out the cranberries, if desired.

Add the apple juice, orange juice and lemon juice to the sugar mixture. Stir to combine and heat through. Serve.
