Ingredients Needed For Pumpkin Spice Whoopie Pies:
Spice cake mix-Betty Crocker Super Moist
Pumpkin puree
Water
Vegetable oil
Eggs
Butter
Powdered sugar
Vanilla
Marshmallow Creme
Instructions For Pumpkin Spice Whoopie Pies:
Pre-heat the oven to 350 degrees.
In a mixing bowl, combine cake mix, pumpkin puree, water, vegetable oil and eggs until combined.
Using a two tablespoon cookie scoop, drop cake/cookie batter onto a greased baking sheet. Try to get the scoop filled up the same with each scoop so your cookies will be similar sizes.
Bake at 350 degrees for10-13 minutes-do not over bake. Ovens vary so, watch the cookies so they do not bake too long.
Remove from oven and allow time to cool on a cooling rack. Continue baking the remaining batter. This will make 18 whoopie pies, so 36 individual cookies/cakes.
Make the frosting:
In another mixing bowl, combine softened butter, powdered sugar, vanilla and Marshmallow Creme until smooth and creamy.
Pipe or spread the frosting or filling onto half of the cooled cookies. Place the other half of the cookies on top of the piped frosting to make a cookie sandwich-or whoopie pie.
Serve and enjoy!
