Salsa Verde Chicken Enchiladas are simple to make and taste fantastic. They are especially easy if you use rotisserie chicken. I love Costco’s rotisserie chicken that has been removed from the bones and packaged with only the white meat. It is so convenient to use and so tender and delicious.

Ingredients Needed for Salsa Verde Chicken Enchiladas:
Cooked and shredded chicken
Herdez Salsa Verde sauce
Flour tortillas
Pepper Jack cheese, grated
Monterey Jack cheese, grated
Lime juice
Chili powder
Onion powder
Garlic, minced
Smoked paprika
Cumin
Cayenne pepper
Salt
Black pepper
Cilantro leaves to garnish, if desired
Instructions for Salsa Verde Chicken Enchiladas:
Cook and shred chicken breast. Keep it hot. I like to cook my chicken breasts in a slow cooker with about 3/4 to 1 cup of water until they are cooked through-165 degrees Fahrenheit. (Or use prepared rotisserie chicken and shred or chop it-this will be cold so place it in a sauce pan, add the ingredients below and heat through)
Place the hot shredded chicken into a bowl.
Add 1/3 cup Salsa Verde sauce, lime juice, chili powder, onion powder, minced garlic, smoked paprika, cumin, cayenne pepper, salt and pepper to the shredded chicken. Stir to combine and coat the chicken with the sauce and seasonings.
Stir in 3 cups of shredded Pepper Jack cheese.
Grease a 9 x 13 baking dish with cooking spray and place in the oven for 8 to 10 minutes.
While the pan heats up, fill the flour tortillas with the chicken mixture and roll up.
Remove the baking dish from the oven and quickly place the rolled up, filled flour tortillas into the baking dish.
Bake uncovered for 20 minutes at 350 degrees F.
Remove the baking dish from the oven and cover with remaining salsa verde sauce and two cups grated Monterey Jack cheese. Place enchiladas back in the oven and continue baking for 10 minutes, until they are hot and bubbly. Serve.

A flavorful chicken enchilada dish covered in salsa verde and cheese.
Ingredients
- 1 1/2 pounds chicken breasts cooked and shredded
- 16 ounces Herdez Salsa Verde divided
- 8 taco size flour tortillas
- 3 cups Pepper Jack cheese grated
- 2 cups Monterey Jack cheese grated
- 1/2 cup lime juice
- 1/2 tbsp chili powder
- 1 tsp onion powder
- 1 large garlic clove minced
- 1/2 tsp smoked paprika
- 1/2 tsp cumiin
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/2 tsp black pepper
- cilantro leaves, if desired to garnish
Instructions

Cook chicken in a slow cooker for 5-6 hours on low-until chicken reaches an internal temperature of 165° F. Or you can cook it your favorite way.

Shred the chicken and place the hot chicken into a mixing bowl.

Add 1/3 cup salsa verde, lime juice, chili powder, onion powder, minced garlic, smoked paprika, cumin, cayenne pepper, salt and pepper. Stir to combine.

Stir in 3 cups grated Pepper Jack cheese.

Spray a 9 x 13 baking dish with cooking spray and place in a 350° oven for 8-10 minutes.

While the baking dish heats up, fill the 8 flour tortillas with the chicken mixture and roll up.

Remove the baking dish from the oven and place the rolled enchiladas in the pan.

Bake enchiladas for 20 minutes, until tortillas begin to brown.

Remove baking dish from the oven and pour remaining salsa verde over the enchiladas. Then, sprinkle 2 cups of grated Monterey Jack cheese on top.

Bake 10 more minutes, until hot and bubbly. Serve.
