Ingredients Needed for Cranberry Orange Meatballs:
Frozen Meatballs
Oranges for the zest and juice
Fresh Cranberries
Simply Orange-Orange Juice
Sugar
Instructions for Cranberry Orange Meatballs:
Zest the oranges and then juice them (you will need one and a half tablespoons of orange zest and four and a half tablespoons of freshly squeezed orange juice).
Place Simple Orange orange juice, orange zest and orange juice from the oranges, sugar and whole fresh cranberries into a large sauce pan-large enough to hold the meatballs, too.
Bring the sauce ingredients to a boil. Simmer for 20-25 minutes to thicken.
Add frozen meatballs to thickened sauce and cook to heat the meatballs. (No one wants to bite into a cold or cool meatball)
Serve as an appetizer or serve over rice.
If you would like even more sauce when serving over rice, here are the amounts for 2 times the sauce recipe:
2 Tablespoons orange zest
6 Tablespoons freshly squeezed orange juice
4 cups fresh or frozen whole cranberries
4 cups Simply Orange orange juice
1 1/2 cups sugar
