Instructions for Macadamia Nut Brittle:
Grease a large baking sheet that has sides. Set aside. (I use the leftover butter on the butter wrappers to grease my baking sheet)
Begin melting butter slowly in a heavy bottomed pan. Use a wooden spoon to stir. When butter has melted, add sugar, white corn syrup, and water. Bring to a boil, stirring continually.
When mixture has come to a full boil, add the macadamia nuts.
Using a candy thermometer, continue boiling mixture and stirring (do not scrape the sides of the pan but, do scrape across the bottom of the pan with the wooden spoon-preferably a wooden spoon with a flat bottom.
When mixture reaches 300 degrees, pour mixture onto the greased baking dish.
Using the wooden spoon, spread macadamia nuts around so they are mostly in a single layer.
Allow time to completely cool.
Break up and store in an air-tight container.
