Ingredients Needed for Caprese Chicken Casserole:
Pasta
Rotisserie chicken
Grape or cherry tomatoes
Olive oil
Balsamic Vinegar
Milk
Boursin Cheese
Salt
Pepper
Fresh basil leaves
How to Make Caprese Chicken Casserole:
Cook pasta according to the package directions. Drain and place in a greased 9 x 13 baking dish.
While the pasta cooks, cut the rotisserie chicken into bite-sized pieces (Costco sales their rotisserie chicken, white meat only, in a 2 pound package-it is the best!)
Cut the tomatoes in half.
Place chicken and tomatoes in the baking dish.
Drizzle olive oil, balsamic vinegar and milk over ingredients.
Sprinkle salt and pepper over the top.
Stir to combine.
Unwrap and place Boursin cheeses in the center of the baking dish a few inches apart.
Cover with foil and bake at 400 degrees for 25 minutes.
Remove from the oven and remove the foil. Stir in basil leaves. Add a little more milk, if needed. Top with more basil and serve.

Caprese Chicken Casserole
An easy comfort food recipe made with Boursin Cheese.
Ingredients
- 12 ounces pasta cooked and drained
- 3/4 cup milk
- 3 cups grape or cherry tomatoes cut in half
- 1 ½ cups rotisserie chicken cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 20 leaves basil 12 for recipe, chopped a bit and 8 or more full leaves to garnish
- 1 tsp salt
- 1/2 tsp pepper
- 2 5 ounce Boursin cheeses garlic & fine herb or Shallot & Chive (or one of each)
Instructions

Cook pasta according to the package directions. Drain and place in greased 9 x 13 baking dish.

While the pasta cooks, cut the chicken and tomatoes.

Place chicken and tomaotes into the baking dish.

Drizzle the olive oil, basalmic vinegar and milk over the pasta mixture.

Sprinkle mixture with salt and pepper. Stir to comine ingredients.

Unwrap both Boursin cheeses and place in the center of the baking dish-press into the pasta mixture a few inches apart.

Cover with aluminum foil and bake at 400 for 25 minutes.

Remove from oven. Remove foil and stir the basil into the casserole, mix well to combine all ingredients. Add a little more milk if desired to reach desired consistency.
