We love this easy Green Chile Chicken dinner recipe. It has great flavor and the kids love it because they can eat it with their hands. I love it because it tastes good and it is easy to make. With only nine ingredients, it’s great to make often.
Using wheat French Bread tastes great too.

Chicken
Green Chile Sauce
Onion Powder
Garlic Powder
Chili Powder
Olives
Jalapeńos
French Bread (white or wheat)
Colby Jack Cheese
How to Make Green Chile Chicken Boats:
Cook the Chicken:
Before you can make this recipe you need to cook and shred the chicken. I find it easy and quick to boil chicken in water. I place the chicken breasts in a large sauce pan (with a lid) filled with water. Then, boil the thawed chicken breasts for about 20 minutes-with the lid on. Check to make sure there is no pink remaining before you shred the chicken. I will usually just cut down the center of the chicken breasts to check for done-ness. We do not want our chicken to be pink at all. I have also boiled frozen chicken breasts, when I have forgotten to remove them from the freezer. This method works as well. Again, make sure there is no pink remaining. Boiling frozen chicken breasts will, of course, take longer.
Put the Chicken Mixture Together:
Now that your chicken is cooked and shredded, combine shredded chicken, Green Chile sauce, onion powder, garlic powder, and chili powder in a deep frying pan. Heat through to a boil.
Next, you will add the sliced black olives and the diced jalapeño peppers. Stir to combine and to heat through.
Cut French Bread in half to make two long pieces. Remove soft middle (eat or discard). Place the long French Bread pieces on a baking sheet. Your baking sheet can be covered with foil or not, your choice.
Now, fill each side of the French Bread boat pieces with the chicken mixture.
Top with the grated cheese and bake at 350 degrees for 10-12 minutes, until cheese is melted and bread is heated through.
Remove from the oven and slice and serve. Enjoy this easy and yummy dinner with a salad or other fresh or cooked vegetables.

A flavorful chicken and green chile stuffed French bread recipe.
Ingredients
- 2 cups chicken shredded
- 1 ½ cups green chile sauce
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp chili powder
- 6 ounce can black olives drained and sliced
- 4 ounce can diced jalapeńos
- 3 cups Colby Jack cheese grated
- French Bread sliced in half lengthwise and middle removed
Instructions
