This is the easiest breakfast recipe! It takes very little time to put together and only uses a mixing bowl and a baking dish. Then, only 20 to 25 minutes to bake. It is good with or without milk and topped with a little whipping cream.
Remember not to use pumpkin pie pumpkin. Use pumpkin puree. It comes in a can. We have used store brand pumpkin puree a lot. They are cheaper and work well. I try to watch the food budget so I buy store brands often. However, if that is not a concern for you, Libby’s pumpkin puree is my favorite.

Ingredients Needed for Pumpkin Chocolate Chip Baked Oatmeal:
Pumpkin puree
Quick oats
Milk
Brown sugar
White Sugar
Egg
Vanilla
Baking powder
Salt
Cinnamon
Nutmeg
Pecans-divided
Chocolate chips-divided
Instructions for Pumpkin Chocolate Chip Baked Oatmeal:
Combine all ingredients EXCEPT: 1/8 cup chocolate chips and 1/4 cup coarsely chopped pecans.
Place mixture in a greased 2-quart baking dish-spread out evenly.
Sprinkle top with the reserved 1/8 cup chocolate chips and 1/4 cup pecans.
Bake at 350 degrees for 20-25 minutes until the edges begin to brown.
Serve with or without milk.

- 1 3/4 cup quick oats
- 3/4 cup milk
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1/2 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 3/8 cup chocolate chips divided 1/4 cup and 1/8 cup
- 3/4 cup pecans divided and coarsely chopped
Instructions

Combne all ingredients EXCEPT: 1/8 cup chocolate chips and 1/4 cup chopped pecans.

Place oatmeal mixture in a greased 2-quart baking dish.

Spread mixture out evenly.

Sprinkle the reserved chocolate chips and chopped pecans on top.
