Double Chocolate Zucchini Bread is very moist and very chocolatey. We used cocoa for the batter and added chocolate chips to give it extra chocolatey goodness!
This recipe makes two loaves of bread. I like milk chocolate chips best in this bread. I have sliced and frozen one loaf before. It worked fine. We microwaved the frozen bread pieces as we wanted them-just a bit to warm it up-it was delicious and moist.

Eggs
Vanilla
Brown sugar
Butter
Flour
Cocoa
Baking powder
Baking soda
Salt
Zucchini-freshly grated
Chocolate chips, divided
Instructions for Double Chocolate Zucchini Bread:
Preheat oven to 350 degrees.
In a medium to large mixing bowl, combine eggs, vanilla, and brown sugar until well blended.
Melt butter slowly in microwave-in a microwave safe bowl. Stir about every 5 seconds-you want the butter to melt but not to get hot.
Add melted butter to egg mixture and combine.
Mix in flour, cocoa, baking powder, baking soda, and salt. Mix until just blended.
Fold in freshly grated zucchini and then the chocolate chips-reserve a 1/4 cup of chocolate chips to place on top of the batter before baking.
Pour batter equally into two greased and flour dusted bread pans.
Sprinkle reserved chocolate chips on top of the batter.
Bake immediately at 350 degrees for 45-50 minutes-until just set. Do not over bake.
Remove from the oven. Cool in the pan for ten minutes and then remove loaves and place them on a cooling rack. Allow time to cool until just warm.
Slice and enjoy!

- 4 eggs room temperature
- 1 tbsp vanilla
- 1 ½ cups brown sugar
- 1 cup butter melted, not hot
- 2 ½ cups flour
- 3/4 cup cocoa
- 1 tsp baking powder
- 2 tsp baking soda
- ¼ tsp salt
- 3 cups zucchini freshly grated
- 2 ¼ cups chocolate chips divided

With a wooden spoon, combine eggs, vanilla, and brown sugar until well combined.

Stir in melted butter. (melt slowly so butter doesn't get hot).

Mix in flour, cocoa, baking powder, baking soda, and salt until just combined.

Stir in freshly grated zucchini.

Fold in 2 cups of the chocolate chips.

Pour batter into two greased and floured bread pans.

Sprinkle 1/8 cup the remaining chocolate chips into the top of the batter in each pan.

Bake immediately at 350° for 45-50 minutes-until center is nearly set.

Allow the bread to cool for 10 minutes in the pan. Remove the bread from the pan and cool on a cooling rack. Slice serve and enjoy!
