This is the easiest dinner to make and very inexpensive-especially if you grow zucchini and onion in your garden.
I love to have a bunch of recipes that call for very few ingredients and are so easy to put together. I have a lot of days when I need to have dinner on the table quickly. This is one of those recipes I use for those crazy busy nights.
This recipe is also versatile. You can use a different squash, more than one type of squash, add garden tomatoes, use ground turkey or chicken instead of beef. I love that it uses some of the produce that I grow in my garden. Zucchini plants produce so many zucchini’s, I am so glad my family loves it!
