Dump all of the delicious ingredients in a blender, then pour ingredients in a greased baking dish, then place casserole in the oven to bake. The most difficult thing about this breakfast casserole is waiting for it to cook so you can eat it and feed it to your hungry family.
Of course, my favorite blender is the Ninja. I have had it for years and love it! The different size blending containers are so helpful.
Ingredients You Will Need For The Easiest Breakfast Casserole:
eggs
cottage cheese
Monterey Jack cheese
green chilies
Jalapeños
butter
flour
baking powder
Option: 2 cups diced ham or 1 to 2 cups bacon crumbles.
Option: stir in jalapeño and green chilies with a spoon to give some texture.
Instructions:
All you need to do is, place all of the ingredients in a blender. You can also just combine the ingredients in a bowl-your choice. I have made this both ways.
(You can also leave the jalapeños and green chilies out of the blender. Then, stir them with a spoon to give texture).
Blend until smooth.
Pour egg mixture in a 9 x 13 baking dish that has been sprayed with cooking spray.
Place egg casserole in the oven to 400 degrees for 15 minutes.
Then, reduce heat to 350 degrees and continue baking for 30 minutes.
Remove from the oven and allow to cool for a few minutes.
Cut and serve with your favorite fruit and beverage.
Options: If you want to add some meat to this breakfast casserole, Stir in two cups diced ham or 1 to 2 cups bacon crumbles after you have blended the egg mixture in the blender-or just mix it all in a bowl. You don’t want to blend your meat.
