Chicken is super easy to boil or bake. Either way works well for this recipe. Just bake or boil the chicken (or cook it in the Crockpot, if desired) and then, shred it. I will usually boil the chicken for this recipe. Just don’t let the chicken become dried out, however you decide to cook it.

I also love to buy Rotisserie chicken that has already been removed from the bones and sold in all breast meat packages. Costco sells it this way and it is fabulous!

In the recipe below, I have stated 1 1/2 to 2 pounds of chicken. Since it is difficult to find chicken breasts that are exactly 1 1/2 pounds, somewhere between 1 1/2 and 2 pounds will work fine.

Ingredients Needed For Hawaiian Style Pulled Chicken:

Chicken

Pineapple

Red bell pepper

Pineapple juice

Soy sauce

Barbecue sauce

Honey

Red pepper flakes

Ground ginger

Water

Buns

Instructions for Hawaiian Style Pulled Chicken:

Cook and shred the chicken. Set aside.

Drain your can of pineapple tidbits RESERVE THE JUICE. You will need 1 cup of pineapple juice for this recipe.

Place the pineapple juice, soy sauce, barbecue sauce, honey, red pepper flakes, ground ginger, water, and diced red bell pepper in a sauce pan. Bring ingredients to a boil, stirring so it doesn’t burn.

Cook until red bell pepper is tender and sauce thickens.

Combine, shredded chicken, drained pineapple tidbits, and sauce. Stir to distribute the sauce.

Serve hot on buns or rolls.

Ingredients

  • 1 ½-2 pounds chicken breast cooked and shredded
  • 1 red bell pepper diced
  • 1 20 ounce can pineapple tidbits reserve juice
  • 1 cup pineapple juice from above can of tidbits
  • 1/4 cup soy sauce
  • 1/3 cup barbecue sauce
  • 2 tbsp honey
  • 1/4 tsp red pepper flakes
  • 1/4 tsp ground ginger
  • 1/2 cup water
  • buns or rolls of your choice

Instructions

  1. Cook and shred chicken.

  2. While the chicken cooks, make the sauce. In a sauce pan, combine pineapple juice, soy sauce, barbecue sauce, honey, red pepper flakes, ground ginger, water, and diced red bell pepper.

  3. Bring ingredients to a boil. Stir continually so sauce will not burn.

  4. Simmer sauce until red bell pepper is tender and sauce thickens.

  5. In another bowl, combine shredded chicken and at least 1 cup of the pineapple tidibts. Use more if you like.

  6. Pour sauce over chicken and pineapple mixture. Stir to combine.

  7. Serve and enjoy!
