This Recipe for Breakfast Muffins is so easy and delicious. They hold their shape so well we can just eat them on the way out the door-no plate, no fork, just a napkin-which is great for my husband who leaves no time for breakfast.

Ingredients Needed For Breakfast Muffins:
6 hashbrown patties (rectangular shaped)
1/2 cup onion, diced into small pieces
1/2 cup green chilies
1 cup ham, diced
1 cup grated Monterey Jack, Mozzarella, Swiss, or cheddar cheese
5 eggs
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
oil-for cooking onion

Instructions:
Spray pan with cooking spray.
Cut 6 hash browns in half, place them in the bottom of the pan and set aside.
In a frying pan, sauté onion until tender in a little oil. Add green chilies and ham. Heat through.
Layer onion, green chilies, and ham over the hash browns.
Then, top with grated cheese.
In a mixing bowl, whisk eggs, milk, salt, and pepper until well combined.
Divide egg mixture between the muffin cups-pour over the the top of the grated cheese.
Bake for 20 minutes at 350 degrees.

Ingredients
- 6 hash brown patties rectangular
- oil
- 1/2 cup onion diced small
- 1/2 cup green chilies
- 1 cup ham diced
- 1 cup cheese (Monterey Jack, Mozzarella, Swiss, or Cheddar) grated
- 5 eggs
- 1/2 cup milk
- 1/4 tsp salt
- 1/8 tsp pepper
Instructions
