Ingredients Needed for Southwest Chicken Tacos:
Cooked and shredded or chopped chicken-rotisserie chicken works so well with this recipe
Taco seasoning
Black beans
Corn
Salsa
Taco shells-the ones with the flat bottoms are perfect!
Toppings:
guacamole, sour cream, cheese, lettuce, cilantro, lime, tomato, red onion, and jalapeńo
Instructions:
Combine the chicken, taco seasoning, drained and rinsed black beans, corn, and salsa in a sauce pan. Heat through.
Serve with taco shells and your choice of toppings.
This is such a simple and yummy recipe. It’s easy to double if you are having more people for dinner.
We have used chicken breasts, which I boiled and then shredded. I really like to use rotisserie chicken for this recipe if I have the time to go buy it. Costco sales a two pound package of rotisserie chicken breast meat. It is so simple to use and has such a great flavor. It is always tender and juicy. This works so great with this and many other recipes. Plus you don’t have to pick the meat off the bones. That saves me a lot of time. I love that!!
