These Gingerbread Pancakes have a great flavor with the molasses, ginger, cloves, and cinnamon ingredients.
We use a griddle to cook these beautiful pancakes on. Griddles make for easy pancake flipping (and easy over medium egg-flipping).
We like gingerbread anytime of the year but, it is especially fun to make and eat during December. Gingerbread and Christmas just go together. We usually make these pancakes on a weekend. We will get together for breakfast and then go do something fun for Christmas. Ingredients Needed for Gingerbread Pancakes:
Buttermilk
Eggs
Molasses
Oil
Flour
Sugar
Baking powder
Baking soda
Ginger
Salt
Cinnamon
Cloves
Instructions for Gingerbread Pancakes:
Combine eggs, milk, molasses and oil in a mixing bowl with a whisk.
In another bowl, combine flour, sugar, baking powder, baking soda, ground ginger, salt, cinnamon and cloves.
Gradually add dry ingredients to the wet ingredients. Stir to combine.
Cook on a hot griddle using non-stick cooking spray or butter.
Serve with your favorite syrup. We suggest Butter Syrup.

Ingredients
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup molasses
- 2 tbsp oil
- 2 cups flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp salt
- 1 tsp cinnamon
- 1/8 tsp cloves
