Ingredients Needed For Sour Cream Mashed Potatoes:

  • 5 pounds potatoes peeled, washed and cut into similar sized chunks
  • 1 cup green onion, diced
  • 2 cloves garlic, minced
  • 4 Tbsp butter
  • 1½ cups sour cream
  • 1 tsp pepper
  • 2 tsp salt

If you want fewer potatoes, this recipe is easy to cut in half:

2 1/2 pounds potatoes

1/2 cup green onion, diced

1 clove garlic, minced

2 Tbsp butter

3/4 cup sour cream

1/2 tsp pepper

1 tsp salt

Instructions For Sour Cream Mashed Potatoes:

  1. Place diced potatoes into a saucepan and cover with water. Bring to a boil and boil for 20 minutes-until potatoes are fork tender. *If you are making these in a slow cooker, place the potatoes into the slow cooker and cover with water. Cook on high for about four hours-or until fork tender. 
  2. When the potatoes are tender, drain the water. 
  3. Mash the potatoes with a potato masher or an electric mixer until smooth.
  4. Add in the green onion, garlic, butter, sour cream, pepper, and salt. Mix to combine-until smooth and creamy. Enjoy!
