- 1 cup green onion, diced
- 2 cloves garlic, minced
- 4 Tbsp butter
- 1½ cups sour cream
- 1 tsp pepper
- 2 tsp salt
If you want fewer potatoes, this recipe is easy to cut in half:
2 1/2 pounds potatoes
1/2 cup green onion, diced
1 clove garlic, minced
2 Tbsp butter
3/4 cup sour cream
1/2 tsp pepper
1 tsp salt
Instructions For Sour Cream Mashed Potatoes:
- Place diced potatoes into a saucepan and cover with water. Bring to a boil and boil for 20 minutes-until potatoes are fork tender. *If you are making these in a slow cooker, place the potatoes into the slow cooker and cover with water. Cook on high for about four hours-or until fork tender.
- When the potatoes are tender, drain the water.
- Mash the potatoes with a potato masher or an electric mixer until smooth.
- Add in the green onion, garlic, butter, sour cream, pepper, and salt. Mix to combine-until smooth and creamy. Enjoy!
