With the weather getting colder, I am wanting more cozy and comforting foods to eat for dinner. This Chicken and Rice Soup is just that… it is so cozy and perfect for fall and winter! Serve this soup with bread or rolls and it’s the perfect meal.
This soup is as easy to make as it is delicious. You just need to chop up some vegetables before you get started. Once you have the vegetables prepped, you’ll start off by melting the butter in a large pot. Add in a little garlic, onion, carrots, and celery and cook those until they become tender.
Next, you will add in the chicken broth, rice, and some spices and bring that to a boil. Then add in your cooked and shredded or diced chicken. If you don’t have any cooked chicken on hand and you don’t want to cook any you can use canned chicken. I have used a can of Costco’s Kirkland chicken breasts before and it works great. Just make sure you drain it and break up the pieces in the can into shreds so there is more chicken throughout the whole dish.
After you add in your chicken, you will turn the heat down and simmer the soup for about 25 minutes or until the rice is cooked and tender. Make sure and stir the soup occasionally while it simmers.
Serve in some cute bowls, these ones are very similar to mine, and enjoy!

Chicken and Rice Soup
An easy soup dish loaded with chicken, rice, and vegetables.
Ingredients
- 3 Tbsp. butter
- 1 clove garlic minced
- 1½ cups carrots chopped
- 1½ cups celery chopped
- ¼ cup onion chopped
- ⅔ cup rice
- 3 cans chicken broth
- 1 tsp. salt
- ½ tsp. pepper
- ¼ tsp. basil
- 1 tsp. parsley
- 1½ cups chicken cooked and shredded or diced
Instructions

In a large pot on medium heat, add the butter and let it melt.

Add in the garlic, onion, carrots, and celery. Cook until the vegetables are tender.

Add in the chicken broth, rice salt, pepper, basil, and parsley. Bring to a boil.

Add the chicken.

Turn the heat down to low, cover with a lid and let it simmer for 25 minutes stirring occasionally.
