How to Make Cilantro Lime Chicken Fajitas:

The chicken does not take long to cook. Just before I am ready to cook the meat and vegetables, I prep the toppings. Wash and remove the core of the lettuce. Grate the cheese, cut up the avocado and refrigerate until ready to serve.

Place the oil in the pan and then add the chicken mixture. I like to cook the chicken a little before I add the vegetables-about 2 minutes. Stir the chicken as it cooks to cook on all sides. Add the sliced onion, bell peppers, and minced garlic. Continue stir-frying as the chicken and vegetables cook. Cook until chicken is cooked through and the vegetables are desired tenderness. Cooking time will vary due to the thickness of the chicken and vegetable strips.

Now that the meat and vegetables are cooked, place some of the chicken and vegetable mixture in a leaf of lettuce. Top with your choice of toppings. I like cheddar cheese, avocado, and a little sour cream. Close the lettuce around the yummy chicken mixture and enjoy!

Ingredients

  • 2 tbsp oil
  • 2 pounds chicken tenders cut into strips
  • 1 large red onion cut into strips
  • 2 large bell peppers: choose the colors you like best cut into strips
  • 2 medium garlic cloves minced

Marinade

  • 3 Tbs fresh lime juice
  • 1/2 cup cilantro leaves chopped slightly
  • 1 Tbs garlic powder
  • 1 tsp onion powder
  • 1 Tbs ground red pepper
  • 1 tsp salt
  • 1 tsp black pepper

Toppings

  • l head Iceberg lettuce
  • 1 large avocado peeled and diced
  • 1 cup sour cream
  • 1 1/2 cups cheddar cheese grated

Marinade Instructions

  1. Combine all seven marinade ingredients in a bowl that is big enough to hold all of the chicken.

  2. Add chicken and stir to coat chicken.

  3. Cover with plastic wrap and place in the refrigerator for 2 hours or longer-even overnight if desired.

Cooking Instructions

  1. Place oil in the bottom of a wok or a deep frying pan.

  2. Add chicken mixture to pan and begin to cook. Cook for 2 minutes, stirring to brown on all sides.

  3. Add onion, bell peppers, and garlic. Cook chicken and vegetables until chicken is cooked through and vegetables are desired tenderness.

Fajita Instructions

  1. Place some chicken and vegetables in the center of a leaf of lettuce.

  2. Top with cheese, avocado, and sour cream.

  3. Wrap lettuce around contents and enjoy!
