Smothered Green Chile Enchiladas are a majorly easy last minute dinner. These are great without the chicken too if you are looking for a meatless option.
Ingredients:
2 cups chicken, shredded
1 can corn, drained
1 can black beans, rinsed and drained
1 4 oz. can diced jalapeños
1 c. cheddar cheese, divided
1 1/2 c. sour cream
1 tsp. chili powder
1 tsp. cumin
28 oz. green chile enchilada sauce
8 tortillas
Directions:
In a bowl, combine the chicken, corn, beans, jalapeños, 1/2 cup of cheese, sour cream, chili powder, and cumin. Mix well.
In a 9×13 pan, coat the bottom with 1 cup of enchilada sauce.
Evenly divide the chicken mixture between 8 tortillas and place in the pan.
Pour the rest of the enchilada sauce over the top of the tortillas making sure to cover all of them. Sprinkle the remaining 1/2 cup cheese on top.
Cover and bake at 375 for 25-30 minutes.
