This is one of my favorite snacks. It is cheesy and spicy and delicious! One of my favorite ingredients in this recipe is…the tomato. I have written 2 Roma tomatoes for this recipe, which is great. However, if you love tomato like I do, you may want to add some extra tomato.
Ingredients Needed For Easy Queso:
1/2 tablespoon oil
1/2 cup onion, diced
2 garlic cloves, minced
16 ounces Velveeta
1 cup milk
3 cups Pepper Jack cheese, grated
4 ounce can diced green chilies
4 ounce can diced Jalapeños
2 Roma tomatoes, diced
1/4 cup cilantro leaves, cut or torn up a little bit
Instructions for Easy Queso:
In a deep frying pan, cook onion in oil.
Add minced garlic and cook for one more minute.
Cut Velveeta into small pieces.
Add Velveeta and milk to cooked onion in frying pan. Stir continually to avoid burning. Lower heat if necessary. You do not want this mixture to boil.
Add grated pepper jack cheese and continue stirring.
Drain green chilies and jalapeńos Then, add them to the cheese mixture. Stir to combine.
Heat through.
Stir in diced tomatoes and cilantro leaves. Stir to combine.
Enjoy with your favorite tortilla chips or crackers.
