This Pasta e Fagioli is the perfect cold weather soup! With the pasta and vegetables, it is so amazingly comforting. I love how it is quick to put together too so I can make it as a last minute meal.
Ingredients:
16 oz. or 3 cups ditalini pasta
1 lb. spicy sausage
5 celery stalks, chopped
2 carrots, peeled and chopped
1 cup onion
4 garlic cloves, minced
4 cans chicken broth
2 cans diced tomatoes
4 cans great northern beans
2 tsp. rosemary leaves
Salt
Pepper
Parmesan Cheese
Parsley
Directions:
Cook sausage in a large pot on medium heat until no longer pink. Add the celery, carrots, and onion. Cook until slightly softened. Add garlic and cook until fragrant. Season with salt and pepper. Add in beans with their liquid, tomatoes, chicken broth, and rosemary. Bring to a boil. Add in pasta. Cook until pasta is al dente.
Top with parmesan cheese and parsley.
