Ingredients Needed for Instant Pot Cilantro Lime Rice:
2 cups rice, rinsed in a mesh strainer
1 14-14.5 ounce can chicken broth
3/4 cup water
2 Tablespoons lime juice.
1/4 cup cilantro, cup up a bit
1/2 teaspoon salt
Instructions:
Rinse rice-I love the metal mess strainer pictured above. Carefully, shake the water out.
Place rinsed rice, chicken broth, water, and lime juice in an instant pot. Stir to combine.
Place the lid on the instant pot, close the valve and lock the lid.
Set the instant pot to high pressure for three minutes.
After the three minutes have passed, allow the pressure to release naturally for 18-20 minutes.
After the 18-20 minutes, carefully turn the valve to make sure the pressure is gone. I use an oven mitt so I do not get burned-just in case. Remove lid and stir in cilantro and salt.
Your Cilantro Lime Rice is ready to eat as a side dish or inside burritos. Enjoy!
