I’m new to the instant pot but these instant pot cheddar bacon mashed potatoes were delicious! They were so quick and easy to make!!
Ingredients Needed for Instant Pot Cheddar Bacon Mashed Potatoes:
2 pounds red potatoes, washed and cut up
2 garlic cloves, minced
1 cup chicken broth
1 cup cream
3 Tablespoons butter
1 cup cheddar cheese, grated
1/2 cup bacon crumbles (I prefer Kirkland’s)
1/2 teaspoon parsley to sprinkle on top
Instructions For Instant Pot Cheddar Bacon Mashed Potatoes:
Place cut potatoes in the bottom of the pressure cooker pot. Add garlic and broth.
Lock the lid of the pressure and make sure the valve is closed. Set the pressure to high and the time to 6 minutes. Press the start button. It will take longer than 6 minutes because the pressure has to build up inside the cooker.
When the 6 minutes is finished on the cooker, carefully release the pressure with the valve. Cover your hand-I used an oven mitt (after I burned myself of course-using only a hot pad-don’t do that).
Unlock the lid and carefully remove pot. Pour potatoes into a colander to drain excess broth. Pour drained potatoes into a bowl. Add the butter and cream and mash the potatoes. Add cheese and bacon crumbles, stir to combine. Top with parsley to add a bit of color.
Serve and enjoy! They are so delicious!!
