This Chicken Fajita Pasta is a great mix up from your normal dinners! It is spicy and full of colorful peppers that add lots of delicious flavor.
Ingredients:
12 oz. bowtie pasta
1 1/2 lbs. chicken, cubed
4 T. lime juice
1 tsp. cumin
1 tsp. paprika
4 garlic cloves
1 jalapeno, chopped (seeds removed if you want less spice)
1 tsp. cayenne
1/2 onion, sliced
1 orange pepper, sliced
1 green pepper, sliced
1/2 cup sour cream
1 7 3/4 oz. El Pato Mexican Hot Sauce
Cilantro for garnish
Directions:
Combine 3 Tbl. lime juice, spices and garlic. Coat chicken in marinade.
Add 1 Tbl. lime juice to a skillet and cook chicken until cooked through. Add in peppers and onion.
Cook pasta until al dente. Drain and rinse. Add into chicken mixture. Add in the El Pato sauce and sour cream. Mix well. Top with cilantro and enjoy!
