Delicious Raspberry Freezer Jam is another recipe I grew up eating. Raspberries may be my favorite fruit!! It is so good on all the usuals: sandwiches, toast, pancakes, waffles, and biscuits. It is delicious over vanilla ice cream too.
Ingredients Needed For Raspberry Freezer Jam:
3 pounds raspberries, washed and drained well
2 packages Pectin
1 1/2 cups water
8 cups sugar
1 1/4 cup Karo syrup
1/4 cup lemon juice
Instructions For Raspberry Freezer Jam:
Wash raspberries and Drain well.
Mash fruit slightly with a potato masher.
Then, add sugar and stir. Add Karo and lemon juice. Stir to combine. Let stand 10 minutes. Stir frequently.
While fruit sits, bring water and Pectin to a boil. Boil for one minute.
After fruit sits for 10 minutes and Pectin is ready, add Pectin mixture to the fruit mixture and mix well.
Put jam in containers that can be placed in the freezer. I like to use 8 containers so I can un-freeze a small amount at a time.
Let containers of jam sit at room temperature until set-up to 24 hours. Place in freezer until ready to use.
